We have been ‘enjoying’ a bit of crazy weather in Sydney lately – lots of strong winds but also some beautiful sunny days, perfect for enjoying a bit of Champagne Sailing on Sydney Harbour! We have met lots of awesome guests already this season, enjoying catamaran charters onboard Seascape as well as a bit of adrenaline fuelled sailing on our yacht Cutting Loose on all these windy days! We offer a variety of catering options for our charters (including BYO -with no fees to use our bbq and utensils). One of our most requested is the Seafood platter and we always get asked for the recipe for our marinated green prawns – soo good freshly bbq’d!! So here it is..
Green Prawns marinated in Coriander, Cumin & Lime
24 peeled and deveined green prawns
1 bunch coriander
juice of 1 lime
1 tsp cumin
1 tsp ground coriander
1 tsp paprika
1 clove garlic
1 tsp rock salt
20g olive oil
Method: Place all ingredients (excluding prawns) into food processor and process until smooth Marinate prawns for at least 1 hour, bbq for approx. 10 mins or until cooked, serve drizzled with lime and with crusty fresh bread & a chilled glass of wine! Enjoy ….
